AruculaCress on Tomato Mousse
AruculaCress turns tomato mousse into a real taste experience.
Ingredients:
- 1 kg tomatoes
- 1 pc. gelatine
- 2 tablespoon AruculaCress
- 1 teaspoon sugar
- ¼ l cream
- salt
- pepper
And here's how:
Soak gelatine in water, cut in and blanch the tomatoes, then peel and cut them into quarters. Strain the quartered tomatoes. Add AruculaCress and sugar. Whip the cream (semi-rigid). Dissolve gelatin in water. Add salt and pepper to puree. Stir in cream. Stir in gelatin.
Spoon the mousse into oiled forms and set overnight in the refrigerator.
